Meal Ideas & Photos

We are all about veggies and nutritious easy-to-prepare meals!  Being vegan doesn't have to be hard as long as you learn a few basics, stock your kitchen with staple foods and spices, and embrace the adventure.  With all the recipes out there in cookbooks and Internet sites, you don't have to look far to find something tasty that will satisfy even the pickiest appetite!  Listed below are a few of the meals we have come to enjoy -- our "go to" list of favorites.  Click the links for the recipes -- bon appetit!


VEGGIE PLATE -- This is perhaps the easiest one of all.  If you already eat veggies you may only need to tweak the way you season them.  For instance, instead of bacon grease or dairy butter, try sauteing in a little olive oil, non-dairy vegan butter, or better yet, water!  We seldom saute in oil -- who needs the fat anyway, right?  Instead of refined salt and sugar, try other healthy spices and seasonings such as turmeric, cinnamon, garam masala, pure maple sugar, and fresh garlic (or garlic powder).  You'd be surprised how good food REALLY tastes when you dare to try flavors and seasonings you never even knew existed!

One of our favorite veggie plates is a sweet baked potato as an entree, with vegetables such as broccoli and black-eyed peas as sides.  Always yummy and never any guilt!

EGGPLANT PARMESAN -- Pictured below is Easiest Eggplant with whole wheat linguine & Newman's Own Marinara Sauce with a fresh salad -- a very satisfying meal.  The recipe called for mayonnaise and seasoned bread crumbs.  Having no mayonnaise, I substituted coconut oil and used whole wheat seasoned bread crumbs and baked the eggplant in a 350 degree oven for about 20 minutes on each side, adding cheese the last five minutes. It was my first time to cook eggplant and it turned out great. Even Joy liked it.
